Bottega Culinaria is the outcome of a project developed locally, enriched over time with discoveries, connection with producers, laughing with customers, and a history of heirloom dishes. Every ingredient glides into the kitchen to be handled, fermented, kneaded, fusing with the green of the hillsides and wild herbs, the salty sea air, telling the story of my homeland.

“tatawelo cafè PROJECT”

The Tatawelo Project was born in 2003 from the synergy between various Italian solidarity economy organizations to support the indigenous Zapatista communities of Chiapas, in Mexico, through the commercialization of coffee. Coffee is the main export product and source of income for hundreds of families of small producers. Commercialization, moreover, is one of the fundamental pillars on which the construction of Zapatista autonomy is based; thanks to the work of the indigenous cooperatives and the sale of products in the solidarity market circuits, the autonomous governments of Chiapas support educational and healthcare structures and the overall development of their communities.
